Hazelnut Banana Bread

Super moist banana bread made with ground hazelnuts.

  • standard size loaf pan, 8 or 9" long

Ingredients

  • 3 large bananas very ripe (300g)
  • ¾ teaspoon fine sea salt
  • 1 cup light brown sugar 180g
  • ½ cup canola oil 100g
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • ¼ cup sour cream 60g
  • 2 large eggs
  • 1 1/4 cups all purpose flour sprinkled into the cup and leveled (157g)
  • heaped cup toasted hazelnuts finely ground (90g)
  • 1 teaspoon baking soda
  • 2-3 tablespoons chocolate hazelnut spread if desired

Instructions

  • Preheat the oven to 350 F. Grease a loaf pan and line it with parchment paper.
  • Smash the bananas with a fork. Stir them with the salt, cinnamon, sugar, oil, vanilla, sour cream and eggs.
  • Whisk in the flour, hazelnuts and baking soda. Pour the batter into the prepared pan.
  • Warm the chocolate hazelnut spread in the microwave and drop it in spoonfuls onto the batter. With an offset spatula, swirl it in.
  • Bake for 55-60 minutes. Store at room temperature in an airtight container.
