Almond Chocolate Chip Cookies
Chewy, hearty chocolate chip cookies made with almond flour.

Servings 16 cookies
- 113g or ½ cup unsalted butter melted
- 150g or ¾ cup or 150g brown sugar light or dark
- 50g or ¼ cup or 50g granulated sugar
- 1 large egg
- 2 teaspoons vanilla
- ½ teaspoon salt
- ¾ teaspoon baking soda
- 200g or 2 cups almond meal or almond flour
- 65g or ½ cup all purpose flour
- 200 g chocolate chips or chopped chocolate semi-sweet, milk or dark
In a bowl, whisk together the melted butter and sugars for a good few minutes until it’s well-combined.
Add the vanilla and salt, whisk for another minute.
Add the egg, whisk well until light and airy.
Add the baking soda, almond meal and all purpose flour and switch to a rubber spatula to combine.
Fold in the chocolate.
Set dough in fridge to chill for about 2 hours.
Preheat oven to 350. Prepare two cookie sheets with parchment paper.
Drop in 1.5-2 tablespoons onto cookie sheets.
Bake for 10-12 minutes.
